There haven't been any instances where I have resorted to it. The knife has a lot of nice features.

My family eats meat and we use this knife to cut large roasts so that they can be frozen. I am surprised at how comfortable this knife is for its length.

First impression is fantastic, looks great, feels great even for the size of the knife not "too heavy". The razor was razor sharp out of the box and in the box when it was delivered. It does not feel like one, but maybe the length of the blade throws the balance forward of the knife. The aesthetics are great, my Japanese knives are better, but this is very nice as well. If the spine were polished instead of ground, it would be much more pleasing, but at a price of $40, I guess it's what one gets. There isn't much chance that the blade is partially welded on but the bolter is blended and ground to equally match the blade thickness. The German knives I have are easy to sharpen I hope the blade will be the same. Really, this is a very impressive thing.
Since this was my first knife, I wasn't really sure what to expect. Last year I started serving prime rib for a lot of holiday meals, and I found that my older carving knife from my BB&T knife set was not sufficient for carving prime rib. (Literally) B was no longer up to the task. I purchased this since it was recommended on Wirecutter, and I was planning on hosting a dinner party in the near future. The knives fit so well in such a large piece of meat, I had no idea they could take on such a task. Before I tell you more, I just want to point out that this is a sharp knife. It makes sharp cuts, but it's not a magic razor blade. It was a secret hope of mine that this knife would glide through meat like hot butter, but I regret to inform you that it falls short of my expectations. There was a lot of clean-up involved with each slice of prime rib, and the machine was particularly good at cutting it. Since I seldom had to "saw" as much as with my old knife, and I was able to cut slightly thinner pieces with more control, I used the new knife less and cut less often. It was also much more attractive to look at than the other slices. Most people would find this to be an excellent knife, and it is likely to be miles better than anything they already have, unless they are For the price, I think this is a really good deal on a tool that makes carving prime rib a lot easier than what you might be used to using. My thoughts are that if this knife was professionally sharpened, it would be ridiculously easy to slice meat smoothly without much pressure. If a sharpening is needed in the future, I will do it just so I can see if there really is a difference from the factory grinding, but out of the box it is perfect.
