The scratched surface is easy to damage! Costco sold us a Henckels Capri Notte Granitium frying pan and we were so pleased with the finish of these pans that we began the search for a cookie sheet to match

As much as I hoped it was the one The truth is that it isn't. It is safe to use metal cookware on the Henckels all day long. On this cookie sheet, we did it for the first time The whole way across, we have a big scratch. The consistency and durability are the same as regular non-stick surfaces. I am not happy at all. Return is on my agenda.

The instructions said you shouldn't cook it above 500, but I cooked it at 450 and it left dark spots on the pan that I couldn't get off.

Temperature should be watched carefully in the oven

Because I have a frying pan made by the same company that I absolutely love, I bought their bakeware. If you bake with this, you must watch the baking very carefully in order not to burn it. There might be a reason for it the color is very dark There is no answer to that question for me. In fact, I have reduced the oven temperature by 25 degrees below of the recipe to the same result.
In terms of durability and scratch resistance, there are no problems.
