According to the manufacturer, it is made from carbon steel. So far, I have not experienced any problems with them in either I would like to be used in a mass production environment. If the legs were folded and unfolded all day in a restaurant, I doubt the mechanism would hold up well. It would be a good idea to order a few sets and test them.

These racks are for jerky making on a Camp Chef pellet smoker, so I bought two more for a total of four racks. The legs can be extended or shortened, so they stack easily with or without legs. I prefer it with the legs collapsed as I can stack all four racks on top of one another and it is even more sturdy and allows me to save even By using both the pellet smoker and a round rack dehydrator at once, I can make both smoked jerky and traditional jerky at the same time. The pellet smoker has a unique taste compared to a standard dehydrator, which gives it a welcome variation. While these racks would not fit into standard round rack dehydrators, if the size is appropriate for one, you may be able to use them in horizontal dehydrators. The pellet smoker works well with this plan and still leaves plenty of room for cooking other meats when making jerky. What a great way to start the day! The team wins!.

In order to use them in our convection microwave oven, we bought them. Unless you can find an OEM rack, the cost of alternative racks is much less than OEM racks, but these racks aren't very durable. The advertisement picture shows them stacked, but as far as stability is concerned, they are not very stable when stacked.
