Angel food cake pans should never be greased. The height of your cake will be reduced.
I'm not sure what the science is behind it, but it works. In fact, you'll have to cut all the way around the outside. serrated knife is recommended for loosening the baked cake's inner edges. There is no need to grease the pan.

The pan's outer shell arrived, but not the center section. It was returned the day before yesterday, but we have yet to reorder it. Some of the new hires in the shipping department, it appears, are not yet up to Amazon's standards. We've had five faulty orders.

I haven't hit it or used anything other than plastic to protect it. I've been avoiding aluminum due to health concerns, and I was hoping that this coated pan would help me do so. The ceramic coating that was supposed to protect you is now in jeopardy! I was expecting a lot more for this price!.
The Angel Food pan turned out to be fantastic. I didn't even have to go around the edge with a knife. My cake came out of the pan on its own. It was a breeze to clean the pan itself. Nothing got stuck in this pan at all. This is something I intend to use more than once or twice a year.
Cleaning other angel food cake pans has always been a hassle for me. As a result, I made the decision to give it a try. It's a lot less work to clean. My other three pans went to the white elephant sale at our church bazaar. I'm only going to use my red pan from now on.

This pan did an excellent job of holding all of the batter in place. I was overfilling a couple of deceptive pans. After that, I'd bake the leftover batter in a loaf pan. That's no longer necessary. In addition, I've discovered that this pan cooks faster. The cake was completed approximately 20 minutes earlier than usual. The ceramic, I believe, helped to distribute heat more evenly. It appeals to me. The pan is sturdy, but not excessively so.

I was unsure how the cake would rise because it was non-stick, but it did so beautifully. It's a little tricky to clean, like all Angel Food pans, and you'll need to soak it. However, I really like the color, and it's a lot more durable than I expected. Because it lacked feet, I cooled it by inverting it onto a bottle.
