I bake sourdough bread once or twice a week and have experimented with various methods, such as Dutch ovens, parchment paper, and so on. br>This small pan is exactly what I've been looking for. br>My only suggestion is to buy two, as I did, so you can invert one on top of the other while it rises and bakes. Keeps large loaves from spilling over the top during a rise, and keeps the contents sealed/moist for the initial bake phase (I use the "lid" for the first 20 minutes, then remove it for a little more crispion). )br>br>Plus, there's no need for any spray or paper. This is the second time I've bought this product. I have two of these pans, as well as two of the smaller ones; I usually bake more than one loaf at a time, so I needed more than one pan; I didn't need to replace a worn-out pan, and I'm not sure if that's possible with these. Caphalon makes the best loaf pans (I also have a 9"square pan for brownies that is made the same way). It is inexhaustible. My other pans have been in my possession for nearly a decade and still look brand new.
Today was the first time I used the Calphalon nonstick loaf pans, which are 5 x 10 inches. I needed a larger loaf pan for bread, and this one is 5" x 10" on the inside at the top. I made a whole wheat oatmeal with extra grains, and it was delicious. The sides and bottom of the cake were a lovely golden brown color. The bread easily slipped out of the pan, leaving it spotless. The pan didn't have any oil in it! The corner seams were said to hold food and be difficult to clean in some of the reviews. This may be true for a meat loaf, but it does not appear to be a problem with bread. I would strongly suggest it!.
For baking bread, this is a good pan to use. The fold-in edges create tiny crevasses that rust and make cleaning difficult, but it's a good pan otherwise.
The pan is nonstick, so baking was a breeze. It's fantastic, and I don't have to lower the temperature of my oven for bread loaves. My only gripe is that the inside four corners aren't securely fastened. They have small gaps in the seams (due to the design of the pan), and because they are not tightly sealed, you have to work a little harder to clean those corners with a brush, and water gets in there, which I can shake out after I wash the pan. I'm a little worried about food or water getting trapped inside and causing a mold or rust problem? It works, but I don't like the corners.
This is a lovely pan for a bakery. I've been using my bread machine a lot lately, but I've been using the dough setting instead of the bread setting and baking the bread in the oven. It was difficult to find a good-quality pan that was both large and sturdy. I had a lot of trouble getting the loaf to come out without a mushroom top. I bought two pans, one to use as a lid and the other to use as a base, as suggested by another reviewer. Everything went smoothly! The end result is shown in my photo, and I'm very happy with it.
Great. There is no need to spray or dust the baked bread, and it is very easy to remove. To clean, simply wipe it out and then wash it. I've used a lot of pans, and these are among the best. I ordered extra so that I could make several loaves at once and freeze them for later use. br>Our home-made bread is a favorite of mine and my family. br>It's healthier and doesn't contain as many additives or preservatives. The quality is excellent, and the price is reasonable. They should remain in good condition and last for years if used as directed.

Someone else's review warned me that during washing, water gets trapped inside the creases in the pan, causing the metal to rust, which eventually leaks out - This is a bad situation. So I make sure to dry the pans both upside down and right side up, and I make sure to dry the corners as well. Despite this, I once discovered a small rusty puddle near one of the corners. I really like these pans, but I really wish they didn't have this issue.
