Since all the hype surrounds this brand, I recently ordered some in order to try it, but from now on I will buy Tra Chang elsewhere, as postage is extremely expensive. As you can see, the flavor is much richer and more full-bodied
On the back of my bottle is the label. There are only two ingredients in this dish pure black anchovy first press and sea salt. The two ingredients are the only ones to be used. There is no msg, water, salt, etc.
For its complex salty component as well as its "fishy" taste, fish sauce should only be used as a condiment sparingly. Thus, it refuses to "cook out" and you do not want to do this. We like Red Boat because it has a good balance of flavors. Initially use sparingly. You may want to try a taste of the sauce straight from the container, just a drop or two, then add it to stir-fries and or Pho soups. If you'd like to add fish sauce to your soup, lime juice and a mild sweet such as Hoisin sauce or rock sugar balance well together.
If you are making meatballs, roasts, or any other type of meat, you can add a little bit of this. Your dishes will taste better and have more depth due to the umami flavor. Your food won't taste fishy, so you won't have to worry about that. The sauce is excellent when making nuoc cham (dipping sauce for spring rolls). It is also great in soups, stews, pasta sauces, and fried rice. It should be noted that fish sauce does contain salt, so you'll want to adjust your recipes either way.
