According to my research, Einkorn is the author of this book. Both my husband and I are gluten sensitive, and because he is Italian, he has to have pasta every Sunday night. I have tried all the other gluten-free pastas, and they all taste terrible. Based on my research, I found that Einkorn wheat has never been hybridized and is the same then as it is today. There is much less gluten in this food than everyday wheat. It also tastes great and we don't endure any of the same side effects as we do when eating.

Our taste for other pasta products is greater than our taste for I think the reason why I don't like it as much is that the recipes I typically use it for call for tomato sauce or pesto, which don't necessarily go well The sauces taste really bitter when it is in the sauces. The way this product doesn't crack or break into mush is what we like, and this product doesn't break down either when reheated. As for rice pasta, I think it would be better to break it up and use it in brothy soups. We use rice for spaghetti most of the time, but with all the arsenic in rice we rarely use it. To fuel my body, I eat a simple grain. Grain products made by the majority of food manufacturers are no longer suitable for my diet. When I decided to try einkorn grain products after much research into why my body is no longer able to process or tolerate wheat or any other grain, it was because of several reasons. It is common knowledge that the Einkorn grain has 14 chromosomes and this is what our cave ancestors ate. I eat this almost exclusively. The gluten from modern breads and pastas does not bother me, but the ancient grains do. There is plenty of fiber in this whole wheat pasta, as is the case with all whole wheat pasta. Only Einkorn whole wheat is used in this recipe and it contains 5 grams of fiber per serving. There has been a difference in the way I digest my food- Wheat pasta does not cause me to feel bloated after eating a hearty meal like it does with other wheat pastas.
