I never knew that the two could have such a different flavor it surprised me. This is the first time I've used Mexican oregano. I find it greatly enhances the taste of our food. My mouth watered the first time I tasted it, but I always get praise whenever I use it in a recipe. I now tell everyone don't miss out on this one! What you are tasting is Mexican oregano. Oregano does not refer to the regular seasonal herb used in Italian cooking.
It smells wonderful as soon as the lid is opened. This oregano is very strong and has a lively aroma. When I think about using it I just smile So much better than the Kroger and Safeway grass clippings I am accustomed to. In addition to the price, this was an excellent purchase. In this jar are loose leaves that do not have much weight, but after crushing a few in my hands, I realized it wouldn't take a lot of this to add flavor to my sauces.
When I got hold of mexican oregano, I realized how much I had been missing out on in my life and cooking. The sauces I make taste better, my pickles are more flavorful. There are a lot of large bits of oregano, and if you crush and sprinkle them on your food they smell wonderful, which means they are grown and processed well, as opposed to other leafy spices that are of such poor quality that you'd better just throw them away.
It is the perfect complement to Mexican cooking, which I do quite often. The jar is still a little pungency-tainted, so I doubt I can finish it before it loses its potency. It looked like it had been picked and dried just recently, unlike most supermarket Italian oregano, which appears to have more dust than leaves. The Classic Provisions brand had whole, big leaves. (I can't commit My observations and opinion are purely my own. )

There's nothing like that sweet, salty Mexican Oregano. There is more than one difference between Mexican Oregano and that tasteless stuff you find in grocery stores of national chains. Just a quick word to those who are unaware of the difference. The reason for only giving this four stars is not because of its poor flavor, but simply because it has a little bit more stem than the dish I normally get at my local Mexican supermarket. In addition to the price difference, it is 300% less expensive, so I am okay with that. Besides, here are two other things It is difficult to convey in the photo what a big jar like this actually looks like. The dimensions of the spice rack are two and a half by three and a half by eight inches, so you may have to knock down some walls to fit it.
