I found the instructions a little complicated, so here is my easy version, which I found to be extremely successful ** Makes 4 cups of milk (any variety, as long as the total is 4 cups) *** 1/2 cup BRM small pearl tapioca *** 1/3 cup sugar *** 1/8 teaspoon salt *** (I used 2/8 teaspoons) (3 shakes of the salt shaker)
* Place all ingredients in a sauce pan and heat it using medium heat until it boils lightly. Timer should be set for 60 minutes once heat has been turned off. The heat residual from the burner should not cause the steam to scorch. Stir the mixture a few times to release steam. Using a small bowl, beat eggs until they are blended. You can measure or estimate 1 cup of the warm tapioca mixture (but not measure) and add it to the eggs. Refrain from stirring too quickly instead, pour only the egg mixture Then cook again on medium heat until a light boil is reached. At least 10 minutes should be enough time to let the meat rest. 1 tsp vanilla extract should be added at this point. Our preference for hot weather is the same as that for cold weather.
