Naturally, I miss carbs as well. The flours that are made from almond and hazelnuts are excellent substitutes for flours in muffins, pie crusts, banana bread, pancakes etc.

The consistency and taste of the grinding process

It was delicious. I'm not sure if this is part of the process, so I'd like it finer or perhaps better sifted, but it sounds like it could be done. It was not welcome to have larger pieces of food.

The pie crust was fantastic with it! I used it in a sweet potato pie crust. There is enough left over to try with others recipes. I found a perfect crumb crust.

Flour of fine quality

My experience with this flour is that it is much finer ground than any hazelnut or almond flour I've encountered. There is a fairly neutral flavor to this bread and it bakes well.

Unless the product was made in a facility that also produced wheat, it is not truly gluten-free and can not be returned, despite the fact that it was not listed. I give it a thumbs.
