At 155 degrees Fahrenheit, the enzyme Alpha Amylase is active. This contains Glucoamylase (Beta Amylase), an enzyme that works at fermenting temperatures.
What the yeast produces is a mystery to me. I believe it produces a mild flavor to keep the rum from becoming overpowering. br>br>However, the yeast reacts quickly with the sugars, resulting in a high-proof wash. It produces a high yield and some of the best high-quality rum I've ever tasted.
It says 6 on the package. 6 gal. It will simply take longer to convert the sugar if you're doing a 10 gallon batch.
The temperature should be between 25 and 30 degrees Celsius (77 and 86 degrees Fahrenheit).

In just four days, you'll be ready to distill. However, I made two five-gallon batches at the same time, one with turbo yeast and the other with regular distillers yeast (which took seven days to complete). The turbo yeast had a harsher flavor, whereas the regular distillers yeast had a much mellower and flavorful flavor. In addition, the regular yeast produced more alcohol per unit of volume. So I guess if you need it three days sooner, this is the option for you.
This is the recipe to use if you need to make rum quickly. On your fermenter, don't even consider using a standard airlock. Make sure you have a blowoff tube handy because this yeast will quickly go crazy. At a temperature of around 68 degrees, fermentation takes about 3 days. When it's been run, I've gotten good flavor and a good yield.
I got WAY MORE than I expected from the final yield thanks to this outstanding yeast. A gallon and a quarter of rum was extracted from a six-gallon batch. The entire batch received a final proof of 130. My estimated ABV was only 13%. Because the yeast contains the glucoamylase enzyme, I was able to get so much more. I believe that the max ABV of 2015 is a little lower than what it can achieve. It's fantastic! I've already purchased it for a second batch. I would strongly suggest it.
We expected a lower than in 2015 due to molasses having fewer fermentable sugars than in 2015 . The rum, however, turned out to be fantastic after a little aging.
