I was extremely dissatisfied with the rye flour I purchased. It's not rye flour; it's a blend that includes more than half wheat. Allow me to tell you about my personal experience. For several years, I've been making rye bread. And purchasing flour from various sources; the best was Hodgson's Mill, but it is no longer in operation. To begin, rye bread must be baked at a high temperature (at least 400 degrees Fahrenheit) and undergo caramelization due to specific sugars and alfa-glucosidase. amilase. Due to the high content of lactic acid as a byproduct, it's also sour and wet; I always start from the beginning to keep the fermentation in check. So, this time I followed the same procedure, but the bread turned out to be much lighter in color, with no rye flavor, a more dried texture, and no sourness at all. Don't let me fool you into thinking it's all rye.
I feed it to my sourdough starter, and the bread I've made with it is delicious and full of flavor! This is something I will continue to order.
This was used to make Caraway Seed Rye Bread, which turned out to be delicious. It's pricey, but it's worth it.
I am a big fan of King Arthur products and try to use them as much as possible. I tried the Artisan Bread in 5 Minutes cookbook's pumpernickel bread recipe. It was fantastic. They use coffee and cocoa powder to color the bread, giving it a very dark appearance. One batch of their bread yields approximately 4 loaves.
The packaging was excellent, the delivery was prompt, and the product was in excellent condition. I would strongly suggest it.
I'm grateful for King Arthur because it's difficult to find flours that aren't widely used. This flour is used to make delicious rye bread.
