For my Yankee friends who don't watch the food channels, roux is pronounced ROO and is a base for soups and stews made primarily of oil. flour. I am gluten intolerant, and prior to discovering this product, I was limited to only making clear stew gravies. While I enjoy a good au ju as much as the next person, comfort food like beef stew requires something more substantial. At least, that's how I feel. br>br>I've tried a few different products in the past, and there may be others that work now, but I'm sticking with this tried and true. I also tried their brown rice flour, which yielded results that were acceptable but not as good as the Sweet Rice blend. The Authentic brand has no effect on me, and as I previously stated, I'm extremely sensitive and act as a barometer for even the tiniest cross-contamination. cross-contamination There are no issues at this location. I bought some Authentic Foods Superfine Sweet Rice Flour, and it was awful. I believe there was an issue with it, which will be discussed further down. It's possible that I got a bad batch or something, but the particular one I bought tasted awful. It's difficult to describe the flavor, but I think the best way to describe it is as a very unpleasant mix of bitterness and an acidic burning sensation. The normal taste should include the fact that, despite its name, the brand I use tends to produce tastes very bitter and has a fairly sharp aftertaste. I have no reason to go back to these brands or the taste I have had previously for these types of rice flour. I'm not sure what to make of the fact that the Authentic Foods Superfine Sweet Rice Flour tasted the way it did. The only time I've had a taste similar to this is when eating foods that have been contaminated by mold (e. g. I've made the mistake of tossing out a visually moldy end of a bread loaf and then eating a piece from the other end that appeared mold-free but tasted off) or with rancid foods. However, the sweet rice flour in this case did not appear to be moldy in any way and appeared to be perfectly white. Also, the main reason I wanted to try it was because it was advertised as Superfine, which sounded very appealing, and I found it to be superfine and finer than the other USA grown brand that I usually buy (although not as fine as the Thai glutinous rice flour that I occasionally buy, at least not as fine as it appeared to me), but I like the idea of a California USA grown rice. It also didn't smell rancid or unusual, as far as I could tell, but it tasted awful. Also, the packaging was impressive and well-sealed, with no damage or openings, etc. Given the nice packaging and otherwise normal appearance, I was taken aback by the taste and have no definite explanation for it.
These are a finer grind than what you'll find in the big-box supermarkets. Not to mention the lower price point! Because my son and I both have celiac disease, I have to make a 1 to 1 flour for us. I don't have to grind it any further in a food processor; I just mix it in with the rest of my flours and go!.

I've tried others, but she prefers the bread I make with this flour, which is hard to come by where I live, so I'm glad I was able to find it online.
For the mochi I made, it was perfect. If I needed it, I'd buy it again. For the item's quality, the price is extremely reasonable.

For Hanami Dango, this was the only kosher sewer rice flour I could find. They tasted good and had a nice consistency, in my opinion.
