It is a flavorful flour made from nixtamalized corn (corn that has been soaked in lime water). For traditional, homemade tamales and corn tortillas, it's an indispensable ingredient. Making corn tortillas requires a traditional dough known as masa, which is a Spanish word for dough.

The most commonly used dough flour is for making corn tortillas - all you have to do is add water and salt, press the dough balls onto a hot surface and cook them. In addition to making tamales, pupusas, empanadas and cornbread, you can also use this flour to make other classic Mexican dishes.
