It's what you want buckwheat to be if you want it to be buckwheat. While I have nothing against any of the other buckwheat varieties, some of them don't act like buckwheat normally. A brand that I dismissed because it looked like, acted like, and tasted like wheat was one that I tried. Despite my belief that it wasn't, I don't understand why it would be worth the extra money to buy buckwheat that tastes like wheat.
The flour I wanted needed to be low in fiber, but I wanted buckwheat flour.
