Buckwheat flour that is finely milled and of excellent quality. This flour is perfect for baking cakes, breads, and galettes. Some members of our family must adhere to glycemic and dietary restrictions due to health issues such as celiac disease and candidiasis, pre diabetes, as well as immunodeficiency. Considering the price we paid, the quantity and quality of this buckwheat flour is very satisfactory.
NOTE ON PACKAGING Unlike previous reviews, the paper flour sack came wrapped in a plastic poly bag inside the Amazon box, so there were no spills. The seller seems to have learned a good lesson from customers who received boxes full of loose buckwheat powder in the past. Our family loves the flour and my husband has been using it for a crepe business we will begin soon, but the bags kept arriving open and with flour spilled inside the boxes. Using the right flour makes a huge difference in the crepe's quality, but unfortunately we are losing too much money on this, so we have had to find another alternative. Imagine how much easier it would have been if there was some tape on the end of the bags by the sender or a plastic bag by Amazon.
In my experience, nothing compares to savory crépes made with one of the finest flours in Brittany, "Blé Noir. " Since the buckwheat flours here in the US are very different, the crepes are dryer and darker than in Canada. When you experienced a real Blé Noir crepe in Brittany, you did not want to give it up. That is why you need a Treblec.
Buckwheat is a good grain. Although this buckwheat is more expensive than what we have in the U. S. , it is quite different from what we usually consume. The flour has a milder taste and is lighter in color. Galettes are made well with this product.
You should prepare crepes like that if you want.
