The following is the response I received from Haldeman Mills in response to your question There is no grain called buckwheat it is actually Therefore, recipes usually include another flour to replace the gluten, which will make the baked goods stand up and not collapse. This should be helpful.
Despite the lack of a gluten-free certification, I believe that it is milled using shared equipment because it is not marked as gluten-free.

My intention was to make buckwheat soba noodles like those I had in Japan with this flour. Since I didn't use it all up before it expired, I had to come up with another use for the flour. I decided to buy the Light Buckwheat Flour from Haldeman Mills after doing some research. Compared to most large bags, this bag was much more manageable. As I was planning on using this flour to make a tart, the flour arrived in perfect condition inside a sealed plastic bag, with a personal note inside it. Merely knowing this is a family-owned and run company gave me a sense of accomplishment. This is a nice product!

I love this buckwheat, it is great. I am supposed to be strict GF and have been bored with all the options. Though I enjoy the cookies and sometimes BW wraps and pastries, and I miss the flavor and texture of the snacks. I have tried the regular BW, and I miss the delicious pastries and texture of bread. My food consumption has increased since I started using this product. My pancakes came out fantastic, and I highly recommend them. It is impossible not to be satisfied after eating these fluffy, filling, and satisfying Pancakes. This flour is definitely my favorite, as well as the cookies. The package reached me on time and in good condition. We are very pleased with the outcome.

This is the first buckwheat flour I have found that I would like I have tried a number of gluten-free products because I have a gluten sensitivity A few days ago I bought buckwheat flour, but found it to be bland and tasteless. My taste for buckwheat flour is not as earthy as I would like it to be. This flour is made from hulled groats, and that significantly improves its flavor. Nutrition is lost from the removal of the hull, but I still find it to be an adequate source of fiber and protein (which is thankfully not gluten-based). Pancakes made with this flour, which I mix 50/50 with gluten free flour mix, are very popular with my family. I'm going to order more bags today after nearly finishing my first in less than a month!.
