For Easter, I made candy out of this chocolate. My cookies did not mold, but they were extremely creamy and soft. In most cases you could keep the candy in shape if you kept it cold after molding. As a matter of fact, I did temper the chocolate even though it doesn't need to be tempered with discs, as its flavor was superior to anything I have ever tried.

In order to make a Buche de Noel, I used a milk chocolate and Chestnut Swiss buttercream frosting. Before adding it to the buttercream, I melted about 4 ounces and mixed it with 4 ounces of pureed chestnuts, a few tablespoons of white honey, and a few tablespoons of French brandy. I am so happy with how it turned out. It was a good day. This flavor does not appeal to me. It would be nice if there was a caramel flavor I was expecting a rich, dark chocolate flavor, but this didn't live up to my expectations. It has a flavor that I don't enjoy, so I won't buy it again.
