I like it. As Chiavetas are practically a religion in Buffalo, we bought some for my wife who is from there. As someone who is not from Buffalo, perhaps I can provide a more objective assessment than those who have an emotional attachment to Chiavetas. Basically, it's a big bottle of cider vinegar with some salt, poultry seasoning (a mixture of about a half-dozen spices that is also sold by spice companies as powder), and a bunch of other stuff. Due to the majority of cider vinegar in the recipe, the results are very vinegary. The lack of oil in this marinade causes me to think of this more as a brine or perhaps "brinerade" than as If you use a brine, it will work its way into the meat and benefit the tissues, which causes water to be absorbed and beef to become more juicy as a result. If you soak the chicken in salty water for little while, it would become more juicy. This does not take away from Chiavetas, but I am hoping that it clarifies a little bit what is going on. You don't need anything extra to brine, as long as you don't have blood pressure issues.

A vinegar brine does impart a strong flavour to the meat that is salty and vinegary. If you marinate this for an overnight period of time, you won't taste the traditional It will give the meat a vinegary taste. I wouldn't recommend marinating the meat overnight with Chiavetas, that would be better to do for 3-4 hours. I would say 4 hours at the most. You need to add oil for it to be a true marinade, in which case no oil is needed. You may be able to work with 2 days. A long term use of the pan will mash up the outer texture of the meat if it does not contain oil. This is my favorite product only to use for chicken, but even better for breaking down bones Especially good for chicken, where it adds a lot of flavor and kicks up the flavor. As far as steaks go, I cannot imagine using this. A little bite would be fine on pork ribs, but not on a chop or loin. Rather than an ordinary meat enhancer, the chicken enhancer is the best choice. In general, it's an interesting product. There is a lot of regional loyalty to the brand in upstate NY, but I'm not convinced it lives up to its hype completely. My favorite thing about it is that it is bone-nourishing There is a lot of protein in chicken.

We're going to treat you like real royalty if you're not already. Using this marinade, you will be able to make the best barbecue chicken ever! You can still make delicious chicken in the oven if it has been too long since you grilled outdoors. There is nothing better than the smell of grilling Chiavetta chicken at the Erie County Fair—nothing quite compares to it. Most people come to the Fair to get chicken - and there is a long line! That is unimaginable. If you decide to use this marinade, you should cut your chicken into quarters or halves. You can marinate for two days or overnight. Trying to get my hands on this is the real deal, I've had rubs, bribes, and mairinades before. This vinegar has a nice This stuff smokes best if you position your grill so that it sticks to one side. This is the best marinade for poultry, vegetables, or pork. Certainly the vinegar flavor is stronger than that of the meat. But you'll still be able to taste the meat flavor more intensely. There are similar spices used in every marinate. Pepper, salt, garlic, etc. are the basic ingredients, but it's how they are combined that makes or breaks a marinade. Only a very small minority of people claim it's nothing special I would appreciate it if you pointed me in the right direction. The marinade does not need to be refrigerated after opening, which is yet another benefit. I would like to buy the largest size, so that would be the best choice. In addition, it's hard to beat the price. Most of the cost online is related to the weight of the package. After opening, you needn't put it in the fridge, so you know there's something in it that's so nasty that nothing can grow on it or damage it. The taste of this stuff goes beyond the intense vinegar smell, it actually makes some yummy If you go for this, be prepared for the flavor to be a bit different from the classic BBQ seasoning. I would suggest cooking it well done on an open grill with real charcoal and tossing in some good mesquite or hickory for smoke flavor. There's no doubt about it, adding this to your seasoning arsenal is a good move. Normally I'd want it to be cheaper, but that's the price you pay.
