I like it. As Chiavetas are practically a religion in Buffalo, we bought some for my wife who is from there. As someone who is not from Buffalo, perhaps I can provide a more objective assessment than those who have an emotional attachment to Chiavetas. Basically, it's a big bottle of cider vinegar with some salt, poultry seasoning (a mixture of about a half-dozen spices that is also sold by spice companies as powder), and a bunch of other stuff. Due to the majority of cider vinegar in the recipe, the results are very vinegary. The lack of oil in this marinade causes me to think of this more as a brine or perhaps "brinerade" than as If you use a brine, it will work its way into the meat and benefit the tissues, which causes water to be absorbed and beef to become more juicy as a result. If you soak the chicken in salty water for little while, it would become more juicy. This does not take away from Chiavetas, but I am hoping that it clarifies a little bit what is going on. You don't need anything extra to brine, as long as you don't have blood pressure issues.
