The racks we offer are Frenched Racks that are fully trimmed. There will be a difference in weight between each one. You will need 25 pounds to fit into your suitcase The eight bones are all the same size. Roasting or grilling is ideal for this product. Grilled rack of lamb is one of my favorite dishes. Prepare them with salt, olive oil, garlic and rosemary (optional) if you want to grill them, and grill them meat side down on high heat for 4 minutes. Once the spuds are roasted on both sides, move them to indirect heat for a total of 9 - 11 minutes. I would recommend 12 minutes (or 135 degrees). Put them in a bowl of ice water for 10 minutes and then turn off the heat. It will result in a medium-rare and charred rack of ribs. There is no need to worry about disappointment.
