As soon as you open it, you should refrigerate You generally don't need an ice pack unless the weather is really hot. We usually ship ours with one, but you don't need to unless it's a hot day.
You will need to refrigerate it. Several types of bread can be used, but my husband (who is French/American) says white bread with butter and pate is best. I lightly toast white bread and cut it into 4 squares if that is what he prefers instead of the baguette. After the biscuits have cooled, rub one side with shaved butter and the other side with pate. Cornichons ( tiny, briny pickles ) and/or small radishes go well with this dish.
When opened they can be kept in the refrigerator for a couple of weeks tightly wrapped in a plastic bag to stop them from oxidizing. FROZE IS NOT A SUITABLE situation.

After spending 13 years in France, I moved to the United States. Good fois gras is difficult to find here in the States unless you go to a high-end restaurant. I would consider this a better OTC product than most.

Using half of the tin for Baked Beef Wellington and the remainder for cheese and toasted bagels, I enjoyed both dishes. There is a very pleasant mellow flavor to the Foie Gras and a smooth consistency to it. This will be the second time I buy.

The taste is good, but after being put in the fridge it tastes like butter.
Rather than being a mousse, this product is a gel You can probably guess that they meant mousse when they said It would have been nice to have something close to a pate.
