What exactly is the definition of plastic? Is this for real? My salami and prosciutto recipe has been passed down through the generations, and I have never, ever used plastic. I am not going to do it. Waxed or parchment paper is recommended. I wish you the best of luck in your endeavors.
I was an Italian when I last lived in San Francisco. Although I enjoy Gallo salami, I believe Molinari salami is superior. Salamis like Gallo salamis or Columbo salamis are good if you like them, but this one is sure to be a hit. It has the purest and most authentic flavor of them all, in my opinion.
The one in question is finnochio, which gets its name from the fennel flavor.
Mold casings are something I'm not familiar with. It comes in whatever packaging it comes in, and I just buy it online, wrapping it up and storing it in the fridge for months. We love Molinari Salami because it tastes so much better than Gallo!

Period. It was a gift, and it made things a lot easier. But I get mine at the Molanari Deli in San Francisco. The prices in Molanari are all the same. Resellers pay the same price as retail customers and enter their Deli through the front door. Mollanari is one of North Beach's last remaining old-school Italian establishments. There are Italian restaurants in the area. However, there are only a few lines from the past.
It takes me back to my childhood in California. In Nebraska, it's difficult to come by good hard salami.
