Originally, I ordered Stilton prior to last Christmas, but it didn't arrive. Several phone calls later, a new order was completed and it arrived just in time for Christmas, shipped on ice in a few days and was perfect. After the cheese had been cut, I took the ounces out of the package. Using a food processor, chop the food into chunks and freeze it. Although I do not have a fresh cheese to compare it to, I believe the taste is acceptable so none of the experience was wasted.
If anyone else has the same problems, try this method. If you could tell me what the liquid did, that would be very interesting.
