Are these durable enough to be used outside? A pergola might be a good place for it. ?

It's something I'd be willing to try outside. As with any metal bracket, you may need to repaint it in a few years as its black finish wears out.

The kit can be mounted to a canopy, right?

A round part can be inserted around a pipe in the ceiling or wherever it may be found. It is screwed into a plate by a threaded pipe.

Are the dimensions (wxl) of the adapter plate for the flat ceiling adapter the same in both types? To determine whether this beam is wider than the beam I plan to mount it to, I need to check. ?

The dimensions are Inches 4" x 2 3/4" There are five of them. It is 6 inches in length. You should multiply it by two. The diameter is 2 inches.

Using this product in a TV studio, I wanted to mount an Epson 99WH projector to an overhead lighting grid. In the description, it said it would accommodate up to a 3-in pipe or truss, but I was preparing to mount it to a 1-in pipe I was concerned that I wouldn't be able to tighten the adapter enough to ensure that it would not slide on the pipe. However, I did not encounter any issues. It has two small "v"notches that keep the pipe centered, resulting in a tight fit between the two. Attaching the 1 was no problem for me. Fit the adapter with a 5" NPT threaded pipe. This is an excellent solution on the whole.

It was installed on a large building with strange angles of beams and all four installations worked great, and the options for this mount allowed it to be installed at any angle.

Locknuts kept an off-center yaw (approximately 3 degrees) from occurring. QualGear ProAV Mount is used in conjunction with the mount.

That's how sturdy and well made the mount is. To mount cameras, I constructed camera drop mounts from them. A 10 foot stick of rigid conduit is held securely in place by these bolts. The next time I buy these, I will buy them again!.
