It is a fraction of what it used to be. As a guess, I would say 3/16. I don't have a milled piece in front of me to measure. I hope this was helpful
The edges of the taper are indeed Note that the tongue is only 1/4" wide, so there won't be a huge area to glue. Having a narrow profile means you lose very little width when cutting.
When you are ready to make the opposite cut, just take off the cutter and place the other at the same elevation, then set them up for the size of material. There is nothing more you need to adjust it will work just fine as is
The best success I've had is to just take one off the spindle and replace it with the next. To the best of my ability, they look like they have the same center size and shape.

This product does a good job of cutting precisely.
I made some flooring and panels as well. Make sure you are getting tongue and goverments that are as deep as you want them to be. It is a great company that sells great tools. I have never had an issue with anything I own from.
It was purchased used, but I did not notice any signs that it had been used before.
