Is the surface of these beads even?

No, they have edges that are necessary for cutting. These are excellent beads that are well worth the money.

What kind of blasting gun and nozlle do you need for this? Doesn't seem to work with the syphon gun in my blast cabinet. ?

It's what I use in a dental micro-surgery. blaster. The tungsten carbide nozzle on the hand piece is 2 mm. To clean mineral specimens, I set the pressure to 60 pounds.

How does this compare to other Spec 10 100-grade glass beads? 170 grit?

This is a great glass bead because it produces very little dust and has a nice finish. Other versions that I've tried have left me very disappointed.
