This is the world's most razor-sharp fillet knife. It has gotten to the point where it is dangerous. Keep an eye on it. Will eat away at bones. When filleting, be careful not to cut through bones or the fillet will be ruined. It's adaptable, so once you've mastered it, it'll serve you well. However, it takes some getting used to because it's so sharp. It's a fantastic blade-changing system. I have a number of high-end fillet knives in my collection. Shun, westuf, Dalstrung, and a few handcrafted Japanese knives costing up to $300 are among the brands available. 00 each. In terms of filleting, nothing beats this. That's how much I enjoy it.

I was stabbed in the finger by a piece of meat. My finger didn't realize it had been cut for about 30 seconds before it began to leak. I'm not blaming the product; I'm simply stating the fact that it's that sharp. Great knife, but I wish it came in a meat-slicing version.
