I have no idea what size you will need for your ball it all depends on the height of the desk you will be using it With a standard height desk, we generally find that a 65 cm or 75 cm work well. With varying inflation on the ball, the size of the balls can be varied by 5cm each way so a 65cm can be used safely where previously a 60cm would have been I am 70 cm tall. It is not my fault I have never needed to deflate it, but I would assume it is something that is easily done It looks like there is a pin that you insert when you inflate in and it should be easy.
It is NOT round at all like the one I just received. The egg is tall and shaped more like a triangle. This one was good when I got it three years ago and is still working well today.

This is a very solid piece of work. I've tried a lot of m@rt balls, and what really stands out is how solid this ball is for seating. In comparison to other models I've owned, it has extremely low flex. It's the same thing others have said. There is a problem with the shape of this ball! In spite of how many times I try to inflate it, I wait 24 hours, then top it off to the proper inflation/size.
