It is contingent on how much you are willing to pay. A light person can self-rescue with enough volume in one chamber, but a heavy person will almost certainly require both chambers to assist in the self-rescue.
Yes! That's all there is to it. The longer answer is that while this paddle float can be used with a greenland style paddle, the float may tend to slip off the end of the paddle because there isn't much of a swell in the paddle blade to keep the float in place. I believe it is worthwhile to give it a shot. I haven't tried a paddle float with a Greenland-style paddle yet, but I believe it will work better than we think.
Canoe paddles are something I'm not familiar with.

There aren't many options for paddle floats, but NRS makes one of the best, in my opinion. This paddle float has two air chambers for added floatation and redundancy. When I go offshore sea kayaking, I always have one of these on me. If water gets inside the paddle float, the mesh material on the bottom allows it to drain quickly. I keep mine on the back deck of my boat, attached to the top. Even if you know how to roll your kayak, it's always a good idea to have one on hand in case you need to wet exit. One thing I would suggest is practicing with your paddle float in calm water a few times. This float is large enough to fit on most kayak paddles, including those with larger blades.
I was blown away by the quality and thought that went into this product; it was clearly designed to fit a wide range of paddles, and you'd be hard pressed to find one that it didn't. Inflating and deflating is a breeze thanks to the sturdy, easy-to-use valves. Water can drain through the open end (mesh bottom). The paddle blade is securely fastened and cannot be removed. If you need it, the dual-sided air bladder provides backup or additional buoyancy. The price was well worth it.

When entering a kayak in deep water, the paddle floats well and keeps the paddle above the water. I don't use it very often, but I'd buy it again if the opportunity arose.
