In working with Canine Companions for Independence to raise service dogs, we were instructed not to leave Halties/Gentle Leaders or leashes on the dog if they weren't in our sight, because the dog could learn to remove them. In the same way, chewing is beneficial. It might be helpful to purchase some spray product that discourages any chewing if it has to be left on. You may even want to arrange to have sessions where the dog isn't aware that you are watching and just spray them with a mixture of water and vinegar ten to one whenever they chew. There is no risk of harm, and it is an excellent way to discourage negative behavior. But you need to be 100% consistent and don't let them realize what you're doing.
Having owned two of these, I can attest to their quality. The size medium was worn by my GSD when she was 4 months old. There was no doubt that the IceFang was the superior harness between the two. The collar also better fit the dogs, not only because it was adjustable to fit the different contours of their bodies.
