It can be calibrated with a wrench; simply immerse the probe in boiling water for 3 minutes, then lock the nut on the back of the thermometer with a wrench to rotate the red indicator to 220 degrees Fahrenheit.

The gauge is easy to read, and the long probe works well, so I gave it two stars. However, when tested in 350°F hot oil against a known accurate thermometer, one of the pair read 325°F while the other read 300°F! They couldn't even agree on what they were talking about. These can't be trusted to do what they're supposed to do - give an accurate reading of the temperature of a cooking liquid These will be returned.
We used it to deep fry a turkey and it worked perfectly after that; our previous thermometer had broken after only one use. It accomplishes the task at hand.
Because the probe is thin enough to fit through one of the vent holes in the lid, I'll be able to see it above the lid even if the thermometer is at the bottom of the canner.
The clips that secure it to the pan are flimsy and ineffective. The clips will not hold this in place because they bend too easily. To work with this product, I finally had to make my own clips.
