My gaskets are only a fraction of an inch thick!
The gaskets used by the Red Cross are made of a flexible "plastic/rubber" material. It's possible that they contain latex, but I doubt it. This is a question that should be directed to the manufacturer.

As I discovered while eating a slice of pie, the gasket is critical for getting the pits out. When I cleaned the pitter, I discovered that the old gasket had ripped, which explained why some of the pits were missing. It now functions as if it were brand new! Yay!.
For sweet cherries, I like this cherry pitter a lot. Almost all of the pits disappear when I use a newer gasket. In a matter of minutes, I can pit 50 cherries. The gaskets do wear out over time and must be replaced.
I was unsure if these would fit my cherry pitter, but they did and are of better quality than the ones that came with it. These are more substantial and thicker than the originals. These, I believe, will last a little bit longer. My purchase has made me very happy.

We're hoping for a total of four seasons. Let's see how things go. So far, everything seems to be going swimmingly.
