When I've filled the bottles almost to the top, I've had the best luck. The fermentation stage is anaerobic - it takes place in the absence of oxygen. In other words, the less oxygen available to the kombucha, the more carbonation. Filling the bottle all the way to the top ensures that the kombucha is carbonated. I hope this information is useful. I'm not familiar with the specific pressure requirements for ginger beer fermentation, but based on my research, it appears that glass bottles should not be used for ginger beer fermentation because the pressure builds beyond the bottles' limit (58 psi). Instead, you should use plastic bottles.
Look for the beer bottle totes made of wood. It would be adorable. If you can't find them here, there are people who make them on Etsy.

These are the bottles I use to make Kombucha. I ferment my second batch for three weeks or longer without burping. The high-pressure seals ensure that the bottles keep their pressure. Given how difficult it is to find truly excellent bottles that do the job, it is well worth the investment to have bottles you can rely on. These bottles, as well as the stainless steel wire forms, caps, and high-pressure seals, are outstanding. Rather than take the chance of having a bad experience with other bottles, I bought a second set of these bottles to be safe. They're also well-packaged for shipping, so nothing has arrived in less than perfect condition. You can put your trust in these.
The bottles arrived in good condition, and the funnel is a nice touch. I use my bottles to make kombucha. I flavor my Kombucha in these bottles and leave it out to ferment for a second time.
I've just finished filling my bottles for the sixth time with Kombucha that I'm making. The metal is still holding up, the seals are reliable, and the bottles have withstood more pressure than I should have. Before refrigerating one batch, I let it sit and ferment for too long. When one was opened, it erupted into a two-foot-high geyser that settled into a steady foaming and flowing out of the bottle until about 1-minute later. There was still 1/2 inch to go. This pressure was easily maintained by the bottles. The others' reaction was slowed by putting them in the fridge. br>br>I'm very pleased with them, and if I ever need more, I'll most likely purchase them from this seller.
It would have been shocking if one had been broken because of the way they were packaged! Each bottle was wrapped twice in bubblewrap before being placed in a crate box. When full, the bottles fit nicely on a shelf in my refrigerator, and when empty, they fit nicely on the bottom rack of my dishwasher. I don't expect the gaskets to wear out anytime soon, if at all, but it's nice to have spares on hand "just in case. " Overall, these are the ideal complement to my kombucha brewing.
Because it was well packaged, it arrived in excellent condition and appeared to be exactly as advertised. The stoppers are plastic, and this set was chosen because ceramic stoppers are much more expensive. Although it has proven to be adequate for kombucha, the seal isn't perfect for preventing carbonation loss. After one day, the kombucha still had some fizz. We also tried sealing 6 oz of beer in a bottle, but it came out flat after a day. We won't return them because they're still usable, but we were hoping for a better seal to prevent carbonation loss.
Although these are marketed for kombucha, they are ideal for liquid storage in general. My cold brew coffee, which I brew a gallon at a time, is stored in them, and my coffee mugs are 16 oz, so these are ideal for filling them every time I leave for work. They were easy to clean, the glass was nice and thick, and they arrived wrapped in so much bubble wrap that I didn't have any concerns about ordering another set and having them arrive intact.
I also prefer my kombucha to be divided into smaller batches for ease of use. I ordered 12 bottles, but one of them arrived broken. When I contacted Hemlock about the broken bottle, I was quickly reimbursed.
These are what I bought to make kombucha with. So far, I've only used them once and have been very happy with the results. The top is ideal for securing the kombucha's seal and making it bubbly. To prevent damage in transit, each bottle was individually wrapped in bubble wrap and placed in a box with individual places for each bottle. They were in excellent shape when they arrived.
