Without a doubt! Its blade is sharp enough to chop all thick-skinned vegetables, but still heavy enough to handle them, but still very sharp for dicing as well. The knife can be used in so many ways that a cleaver cannot.
You're good to go with this, since it's a double bevel. Years ago I purchased this for myself, and I've bought it for friends as gifts and no one has ever complained about it.
prefer the smaller size of this over my chef's knife for dicing vegetables, and if I have to use brunoise cuts, this is more precise than my chef's knife.

I have found that my wife has become accustomed to using this Knives to knife. * I have some old Global knives and noticed that the G-type blades are less sharp than other knives. The steel is still the best in the industry. As for the cost, it is much less, so if you are on the fence, I can say that I have tried both for my medium hands and prefer this one. It's a 7" knife with a wider blade, and I use it for cake, ha ha, but I like the smaller one for vegetables. These two knives are amazing, though I don't think they can be put in the dishwasher. As a Christmas present, I bought my husband this Vegi knife and he is thrilled with it! It was the first Global knife we bought. He used it five times over the last two weeks and praised it every time. It went from blunt to sharp in no time. The product is easy to use, and it requires little maintenance. This knife would be better suited for bushcrafters as the blade is shorter than expected ( see picture w/reference) but it still makes a great gift. Before using this knife, it is essential to read the instruction manual to ensure proper sharpening. A second Global is definitely in the cards.
This is the best knife I've ever seen. At home I use this knife, not in a professional kitchen, and I am blown away by its performance. For the entire length of my career, I've worked in the restaurant industry. This is the best knife I've ever seen. My experience with knives has taken me through almost every brand, both at home and in my professional position, Shun knives, Global knives, Wusthof knives, Henckel knives, etc, and I really like this particular Global knife. With my Chef's knife and this one, I am able to do 95% of my kitchen work with either one of them. Vegetable knives such as this one are great for slicing, but can also rock chop. You should keep in mind that this is not a chef's knife, and it should not be used as one. Using this knife to break apart chicken is never going to be an option. Nevertheless, if you want to get some vegetable preparation done with speed and ease, then this is the knife for you.

While I am not a professional chef, I rather enjoy cooking at home and make sure the tools I need are available. This knife is amazing!! I am in love with it! Size 5 1/2" is probably going to be the most convenient for me. I am going to get the GS5 now that I like it so much. For large jobs, there is a 7inch option. A total of six different models have been collected. Like Global, there is no other knife like it. It looks like a razor blade on my blades, and I have collected six different models, as well as the Minosharp sharpener. It takes an edge easily, and keeps it for a reasonable amount of time.
