Would these be suitable for use in saltwater pools within the skimmer basket? How would they prevent equipment damage?

In a pool skimmer, you can absolutely do this. If you don't need that much space, go smaller than 3". Over the past four decades, I have always thrown my old zincs in the bilge of my boats. The effect is similar to the one you get with

use in freshwater where corrosion is caused by metals that are dissimilar. Would zinc, aluminum, or magnesium be better to use?

Supposing that the metal is a sacrificial metal, any metal will do. The most commonly used metal is zinc, which is used for anode rods in water heaters. You can simply clamp the zincs on with red locktite. They will eventually loosen and you will end up losing them if they corrode. It has proven to be stable all season thanks to locktite.

I also had to purchase two (2 total), so I bought Anodes consist of two halves that are assembled to create one (1) complete unit. The answer is two (2) anodes, no way around it.
