For the modernist chef, this is an excellent tool

or - How to turn a $5 tool into a $100 tool in just a few minutes. BLUF: It's of excellent quality, well-made, and extremely practical. The cost ($133) was higher than in other stores, and the 8-hour delivery time was a disappointment. The 12-inch version is less expensive than the 12-inch version, but it is less useful in the kitchen. version in inches br>br>I'm not looking at this sieve for the purpose it was designed for; Sifting through dirt and rocks is not something I enjoy doing. This was recommended by a number of modernist cooking blogs as a tool for everything from basic straining to making fluid gels. I'm going to split it into two sections: There are two versions of the review: one for beginners and one for advanced users. br>br>The Advanced Analysis - You already know why you're investing in a laboratory. test sieve for grade Advantech produces high-quality products, but they come at a high cost. Consider a less expensive brand or a brass sieve (Advantech produces brass bodies with stainless steel screens or brass bodies with brass screens). I advise you to use a stainless steel screen). br>br>Get the same size (diameter) for all your sieves, so you only have to buy one bottom pan. br>br>50 is a good middle ground and works wonders for things like potatoes, but you'll probably end up getting more than one size. br>br>Get the same size (diameter) for all your sieves, so you only have to buy one bottom pan. br>br>Review for the Beginner - You probably already know why you need a kitchen testing sieve. Here are a few things to think about. First and foremost, if this is your first purchase, this is a good one to go with. If you're buying a set, Modernist Cuisine recommends starting with a 20, 50, and 120, which should cover the majority of your needs. Some people will use a 200 to clarify stocks, but that's a topic for another day. 8- br>br>br>br>br>br>br>br>br 12 inch or inch inch? Get the 12-inch if you can afford it and have the space in your kitchen cabinets. inch. With more screen real estate, you'll be able to pass more product before having to unclog the screen, making it easier to maneuver in the pan. Having said that, a score of 8 out of 10 is a good score. Whatever size you choose, make sure that all of your sieves are the same size so that you can only use one bottom pan. The bottom pan serves as a glorified bowl into which the sieve can be inserted, providing a stable work surface. You can also use a bowl, but the fit might be a little tight and you'll have to be careful not to bend the sieve's skirt. You don't have to buy the bottom pan if you can't afford it, but if you buy all the same size, you'll only have to buy one if you change your mind later. br>br>Full height is what you desire. It will allow you to fill the sieve with more product without spilling it. When purchasing a bottom pan, make sure it is full height as well. You can use a shorter sieve if necessary, but the bottom pan should not be reduced in size. If you haven't used a metal mesh strainer before, this isn't the product for you. You can get one for a few dollars, and it may be sufficient for all your needs; however, if you're tired of raspberry seeds passing through, or you need a flat surface and smaller screen to break down fluid gels, this one will be ideal.
