Questions & Answers
Yes, it's a German-made product.
Sure, it'll cut through smaller bones, but this isn't a meat cleaver, and it's not designed to sever large bones or joints. This knife isn't as heavy as a meat cleaver, and the edge won't withstand heavy chopping.
My estimate is between 1/16th and 1/8th of an inch. Maybe three millimeters. We gave it to our son, who is a picky chef in his own kitchen, and he enjoys using it to prepare his vegetable dishes in particular. I hope this has been of assistance. It's a beautiful piece of gear.
The weight is ten pounds. 294 g of 4 oz.

I was really excited to get my hands on this knife, but the one I got didn't have a Made in Germany stamp on it. Another reviewer, I know, had a similar problem. I'm not sure if I got a knockoff or if there are multiple versions of this knife, but the description says it's made in Germany, and that's what I paid for. This item will be sent back to you.
br>br>The first one I got was a Dexter Russell 5178 Traditional Wood Handle 8" Chinese Chef's Knife (Dexter Russell 5178 Traditional Wood Handle 8" Chinese Chef's Knife). It was too heavy for me to use comfortably (I am 5'11'', 200 pounds, and have large hands). It was dull, and the edge had an irregular curve to it. Even after I had it re-sharpened and re-polished by a professional, it was still dull. It didn't last long after being profiled. Steel that appears to be reasonably priced. br>br>Next, I bought an unbranded carbon steel Chinese Chef's Knife from a thrift store that had a similar handle but was lighter and more balanced. It was EXTREMELY sharp and held the edge well after some rust removal and professional sharpening. I was aware that I shouldn't store it wet or use it with acidic foods, but it would rust in the middle of the meal! WAY TOO MUCH TROUBLE, as if I didn't already have enough to deal with! br>br>This was my third knife purchase, and it was a good compromise. Good balance and weight, comfortable handle (while I prefer the traditional round style, this looks pretty good too IMO), comes sharp and after professional sharpening isn't quite as sharp as carbon steel but still very good. My only complaint is that the knife's spine is not rounded, which can be uncomfortable when cutting for long periods of time; I used medium grit sandpaper to dull the corners of the spine, and it is now very comfortable.
I like the knife because it is very sharp. The back of the blade, on the other hand, is razor-sharp. When cutting hard vegetables like pumpkin, I have to press the back of the blade down to make it easier to cut; otherwise, the sharp edge bleeds my finger. It's not as serious as a paper cut, but it's annoying. 🙁.
Using this cleaver to cut tough vegetables like rutabagas, large carrots, cabbages, and other tough vegetables is difficult on the hands, despite the shape of the handle. I hold the cleaver in my hands with the first and third fingers gripping the blade's top, and the other fingers gripping the handle. Given the amount of force required to cut through root vegetables, the handle should be thicker. The blade has a good weight and an excellent edge, with a steep angle.
I really like this knife because it has a nice handle and is heavy enough for tough vegetables. It also works well as a board scraper for quickly dumping food into a pan or pot. br>br>When crushing is required, the wide blade comes in handy. br>br>I was in desperate need of a cleaver, and this is an excellent alternative.

They claim to have changed the packaging and blade stamping, and that this knife is made in Germany. I suggested that "made in Germany" be printed somewhere on the knife or packaging for those of us who want to buy things that aren't made in China. Another reviewer had the same problem and had to return their knife.

He employs them on a regular basis. because of everything He is smitten with them. They're razor-sharp and a significant improvement over his previous knives. I've only used them once because I'm afraid of accidentally cutting my finger off, but I was surprised at how light they are. however, it is razor sharp! Even the tiniest amount of pressure is enough to cut through anything. I warned my husband not to put these knives in the dishwasher, and he's been very diligent in hand-washing them; I warned him that if he did, an enraged German steelmaker would break down our door and take his knives away for abuse. This isn't entirely accurate because the description states that they can be washed in the dishwasher, but everyone who has commented in the reviews says DON'T DO IT. As a result, we haven't done anything yet. I'm hoping this knife lasts a long time because he loves it so much.
It's an excellent knife. When I was working as a sushi chef, I purchased a Zwilling chef knife about three years ago. Cutting countless sushi rolls was a pleasure and a time saver. As I began to cook more at home, I decided to purchase a cleaver of the same brand. It didn't fall short of my expectations. It has a good edge and is long-lasting. It can be used for a variety of cooking techniques. This knife has provided me with a great deal of satisfaction.
