It's not something I'd advise you to do. The wires used for slicing are quite thin, and they work well with a variety of items like fresh mozzarella, strawberries, and eggs, but they would break if used on something as solid and hard as a potato.
I've had one for more than two decades and have never had to replace the wires. I ordered the one I'm rating for my niece, who had an old plastic one that I had broken. She's been doing well so far. It is a big hit with her husband. It's perfect for slicing strawberries, mushrooms, kiwis, eggs, and anything else that's soft enough to slice. It's small enough for slices to fit in it.
Works great for salads if you rotate the egg 90 degrees before slicing it.
So far, the coating hasn't peeled away. I've bought plastic ones before, but they lasted about two weeks before breaking down. This metal piece appeals to me greatly.

This is the worst egg slicer ever, and I can't stop laughing about it. The first cut I made with a hard boiled egg resulted in the loss of one wire, the second egg resulted in the loss of another, and the third egg resulted in the entire thing coming apart.
My old egg slicer was becoming difficult to use and the wires were becoming loose, so I ordered this to replace it. My old slicer was made of plastic and was difficult to clean because it had so many nooks and crannies where food debris could collect. This egg slicer is made of heavy wires and is easy to clean, which is important to me. Anyone looking for a new egg slicer should consider this product.

Build quality is excellent. Metal frame that is very strong. Easy to clean and slices eggs nicely. Simply rinse and pat dry. Unlike some other slicers, there are no extra nooks and crannies to clean or be concerned about. I would strongly suggest it.
