Despite the fact that the listing clearly states that the unit is a "cooker/warmer," one of the answers to one of the questions claims that it is only a warmer. What's going on here?

Is it true that 6" deep pans sit directly on the bottom, or is there still room underneath for water?

We run 3- 6 x 1/3-inch pans Water is usually 2 inches deep in the bottom of the pans, so there is water underneath them as well as halfway up the sides.

Poaching is done perfectly

With the large inset pan and lid, it works perfectly. I poached six 25-pound batches of smoked sausage with perfect results, reaching an internal temperature of 150 degrees. It keeps its temperature for a long time. This is a unit I strongly recommend.

This isn't going to last very long

Period! In the last 18 months, we've purchased three of these for our restaurants, and they've all died. They might be able to hold hot food, but cooking and getting products up to temperature are out of the question. These counter top units lose their ability to cook at high temperatures over time, but they're actually more expensive than some of the cheaper alternatives I've tried, and they're by far the worst. These had the highest rate of failure of any unit I've seen in the last 15 years. I strongly advise you to switch to a different brand, such as an APW or a $100 model. I'm willing to bet that the $100 unit will last longer than the $160 units.

No more small warmer cans for me, thanks to this practical and well-built device. For maximum convenience in the smallest amount of counter space, use one deep dish or, better yet, two 6 inch half sheets.

This is not a good deal

This has been in my possession for two years, and I use it on a regular basis. It is no longer watertight, and water is leaking out of the body. br>While it was functional, it was not a good value for the money.

Good product that meets the requirements of a 24-hour restaurant. This is one of the few warmers in this price range that can accommodate 6" deep pans.
