The purpose of the water pan is to add water to the pan, which slowly evaporates to create a more humid environment. It will help to keep the food uncovered so that it does not dry out as quickly. Food warmers are intended to keep food warm rather than to heat it up. As a result, the food should be hot already.
No, this warmer does not require water to operate. A small water tray mounted beneath the bottom shelf can be added.
The shelves can be taken out, but a deeper pan won't fit. The 3" disposable aluminum pans are the deepest that will work.

I run a commissary as well as a food truck. This warmer was purchased to keep items warm until they were ready to serve. The warmer was wrapped in a sticky wrap when it arrived, and I had no idea what would be on it. It took some effort to remove everything so that I could use it. This wasn't difficult, but it was time-consuming, and I wanted to share it with you for your information. Only when I started looking inside the warmer did I notice metal shavings accumulating in various places where holes had been drilled during the manufacturing process. These can be seen in the image. They were piled up on the bottom, and some were left attached to the drilled holes on the top. Cleaning all of these out and removing the shavings from the top took some time. This was disappointing because this item was supposed to be used to store food for sale. It bothered me that I would have to take extra precautions to ensure that the food I served contained no metal shavings. The only other flaw I can think of is that without insulation, this warmer will never reach temperatures above 160°. I had it on for over two hours, set to maximum, and I could never get it above 160. It began to climb after I draped a blanket over it to provide insulation and keep the heat in, and it was up to 200 degrees in 30 minutes.

This warmer is one of my favorites. I purchased three. I occasionally provide private chef services, with one at each AirBnB. It's ideal for keeping food warm and dough proofing.
This warmer has served me well. It's very light and easy to operate. It was pre-assembled and ready to use when it arrived. Simply connect it to the power source and begin using it. My only issue at first was that the food on the bottom of the warmer became too hot and dried out, but we solved this by only keeping fried foods that can withstand higher temperatures on the bottom, as well as a half pan full of water, which worked perfectly while adding moisture to the rest of the warmer. This unit can be kept hot for up to 5 hours without compromising the quality of the finished product. Heatmax has always been prompt in responding to inquiries and concerns. Great company and product!.
Very nice warmer that holds four full-size pans and warms food to different temperatures.
All of the meats were kept warm for several days.
