7" br>I love how easy it is to filet skinny fish with this filet knife! Excellent quality, comparable to that of our department store J. Henckels, which means "not a knockoff," maintains its edge with a flexible but strong blade. In our house, this knife gets a lot of use, and I'd buy it again a hundred times.

If the price of this knife is putting you off, here's what I'd recommend: I've gone on a price/quality roller coaster. This is one purchase where I feel I got more than my money's worth in terms of quality; this knife is simply an essential for any serious cook, and Zwilling is the brand. br>br>My wife and I own a set of JC Penney's Cooks knives that we've had for the last 20 years. They're adequate for the job, but as we've improved our kitchen skills, I've wanted to upgrade. The edge on the Cook's knives isn't very good. br>br>After doing some research, we decided on Zwilling knives. While I like all of the knives we bought, this 7" Professional S fillet is one of my favorites because, as many other reviewers have said, these knives are razor sharp right out of the box. While you'd think that sharpness would be expected, Zwilling goes above and beyond. The edge was razor-sharp, and I'm confident it could be used for minor surgery. Using Gordon Ramsay's Masterclass as a guide, I put the flexibility to the test: Like spring steel, this knife bends easily and returns to its original shape. For its first run, I decided to use it to trim some steaks. The blade glided effortlessly through the cuts, and the narrow blade profile allowed me to precisely trim the grizzle and silverskin from several cuts without nicking the meat. I'm not sure if it's normal to be so excited about using a knife, but I was. br>br>I honed the edge of the knife the second time I used it by running it against a steel. I was a little apprehensive about doing so, but I used some tips from Gordon Ramsay, who advocates constant honing. I was separating and trimming a roast this time, and I must have honed the knife correctly because it performed just as well as it had previously. As I guided the blade around the bone, I was able to benefit from the blade's flexibility. It was absolutely incredible. I have a lot of respect for this knife now that I've seen how easily it cuts. br>br>Not every knife we bought was a Zwilling, and not every Zwilling knife we bought was a Professional S. In fact, I prefer the full bolster of this style blade, so this 7" fillet is the only Professional S I have. With the other knives (chef, Santoku, paring), I prefer the Pro series' curved half bolster. In any case, Zwilling makes up the majority of our collection, and this 7" fillet is a standout.
This is a well-made knife that comes razor-sharp right out of the box. With a lifetime warranty and proper use and care, this knife should last you a lifetime. The quality control is the only issue I have. This is a brand new knife that has been removed from its factory sealed box and already has significant wear and flaws on the handle. These are purely cosmetic and have no bearing on the knife's functionality, but having paid such a high price for it, I expect a certain level of craftsmanship. I'm not sure if this is the case with all Zwilling knife handles, or if it's just this one. I took a photo to demonstrate this, in the hopes that Zwilling will investigate the manufacturing process and resolve the issue.
It is a fantastic knife at a reasonable price, and it takes and holds an excellent edge. The blade has a great deal of flexibility.
So far, it's my favorite of the bunch! I'm excited to expand my collection even more! Excellent quality, extremely sharp, and precisely what I was looking for!.
It's a knife with excellent balance and a razor-sharp edge. I can cut a tomato or an onion without squashing them. There'll be no more slicing things with a saw!.
In some strange way, the 7-year-old The filet knife, which was an inch in length, had vanished. I had forgotten how much I had relied on it and how much I had missed it. My collection is now complete once more.
After about two months of use, this knife broke. It was poorly constructed.
The "S" line from Pro is fantastic. This knife has a nice balance and is extremely useful. You can't go wrong with the Zwilling JA Henckels Pro "S" line: great price, excellent quality, no sales tax, and free shipping. For the money, you can't beat it!.
