This is a fantastic knife that has yet to be adequately described. After several people pointed out the error, Zwilling changed the listed blade length from 8" to 7" the other day. The LxWxH dimensions, on the other hand, are completely incorrect, with an overall length of 12". Handle width is 5/8 inch. Blade width is 1/16" wide. 5/8" blade height in the middle. The "curved bolster," which is a ricasso/choil in front of the grip, is mentioned in the description. This enables a good blade pinch grip, which improves blade control. This feature distinguishes the Pro Series knife from the Zwilling 7" boning knife, which costs $10 less. br>br>The knife was razor-sharp when it arrived. It's flexible enough for a boning/filet knife, with a 7" blade that's neither too long nor too short, and a handle that's slightly longer than the others in my block set but OTW identical. The blade (full tang) runs the entire length of the handle. br>br>Excellent material and finish quality. For a professional knife, this is a good deal.
It hasn't been sharpened because I haven't used it long enough.
It's very repairable and sharp, and I like it a lot.
I've used a lot of fillet knives, and this is by far the best! It's well worth the money.
Sharp as a razor, with just enough flex to help fillet smaller fish. It was also easy to remove the skin, as if it were butter. We'll see how well it holds up over time, but it appears to be of good quality. It's become my new favorite small-cutting knife. a fish of average size.
Right out of the box, this knife was razor sharp, slicing through fat like soft butter.
This is what I bought to clean briskets and pork butts with. It performs admirably!.
