Wusthof is the originator of this phrase. com - Because the steel hardness varies from one manufacturer to another, it's best to use the same brand sharpener as the knives you're sharpening. To sharpen your knives properly, you must use a steel with a higher Rockwell degree than the knife (WÜSTHOF forged knives are tempered at 58 Rockwell, while all sharpening products are tempered at 65 Rockwell).
Yes, the blade is extremely adaptable. Chefs Corner Store is a specialty store that caters to chefs.
I haven't tried halibut, but it's a big blade at 7 inches. I usually work with small fish like bluegills and trout, and I've found that this knife is a little too long for the tight spaces and precision cuts; however, I haven't had any problems with larger fish like walleye and pike. I've also used the knife to prepare venison and found it to be very effective. It's razor sharp and high-quality steel, just like the rest of my Wusthofs, so it stays that way for longer.

I've taken it on fishing trips for lake trout and salmon, surf perch and steelhead, and it debones and filets fish with great precision in the short time I've had it. Perfectly balanced and razor sharp. I plan to use it for a long time.
Only one beef, 5° per side, great knife. The sheath's snap is far too tight. It was extremely difficult to close the door. Oh, and there's a third. There is only one way to wear the belt loop. But, hey, why not? There's no need to repeat what everyone else has said; the knife is a work of art. Mine isn't marked with the metal composition. Instead, it reads, "200 years of producing knives. " Oh, and I also inquired about the blade's angle with the manufacturer. The temperature is 25 degrees Fahrenheit (12 degrees Celsius). Make sure you get the right angle sharpener, as there are five on each side. That isn't a "right angle," also known as a 90-degree angle. The SR-II was my tool of choice. 2 Rollsharp with a 30 degree angle (15 on each side) that works great. For my money, it's close enough. It's razor-sharp after he's finished with it. I'm not crazy at all. insane is a better word. br>br>Update 7/10/17br>I've been meaning to come back here for a while. The sheath snaps fine; just pull it up a little before trying to snap it.
, I haven't done any filleting as of yet. I've had a number of fillet knives in the $50 range. I'm also a knife collector, so I'm well-versed in the weaponry. This knife is without a doubt the best kitchen or fishing knife I've ever used. It has a great feel in your hand, and the steel is extremely fine; if you tap the blade with your finger, it sings. I'll return once I've put it to use.
After a few months, the sharp flexibility is still going strong. I know guys who buy a new $20 filet knife every two months and sharpen it before each use. It's more cost-effective to just purchase this one. I only wish it came in a bigger size.
period! I've never owned a better filet knife than this one! Super sharp, and it keeps its edge for a long time. You're good to go with just a couple of passes with a sharpening stick. I purchased a mesh glove to go with it, and I highly recommend it for this knife because of the blade's flexibility. Filleting fish is a breeze with this tool!.
I haven't used it to fillet any fish yet because my last two fishing trips were unsuccessful. The knife has a great feel to it: it's well balanced, flexible, and sharp enough to shave my arms' hair. I'm looking forward to filleting the red drum I caught with it this weekend.
Unfortunately, the knife's box was bent and broken, and the seller made an odd comment about it. The knife had been bent significantly and was defective due to lack of care. Neither the knife nor the fork were razor-sharp. Customers who value functionality, craftsmanship, beauty, and authenticity of knives will be disappointed, as will other customers. I hope this information is useful in assisting others with their purchasing decisions.
Filet fish and slice various foods into paper thin slices with the knife. br>Knife is thin, flexible, and stiff enough. If it isn't kept razor sharp, it will stop working.
