What are the advantages and disadvantages of the 7-inch Classic vs. the 7-inch Flexible designs?
I've never used the classic, but the flexible is noticeably lighter and more flexible. It's a little flexible, but it cuts through pork chops like a hot knife through soft butter - With ease, a 1 inch thick cut chop can be easily divided into four very thin chops. I've never had a Wusthof knife perform as well as this one. Money saved by purchasing cheaper cuts of meat will eventually cover the cost of this knife.
How much of a blade angle do you have? Is it 14, as is the case with the majority of their knives?

Knife is incredible. With the utmost ease, cheap thick cut pork chops can be transformed into expensive thin cut chops. It's not cheap, but it'll pay for itself with each use - In just one package of pork chops, you can save at least $12.
