If you're going to butterfly chicken, I'd suggest using a stiffer blade. This knife's blade is extremely flexible, making it ideal for filleting fish. Also, any knife should not be washed in the dishwasher. Your knives should always be washed by hand.

First and foremost, this knife appears to be everything I expected from a Victorinox Forschner; it appears to be everything I expected from a Victorinox Forschner. It's razor-sharp, light, and has a Fibrox handle that's extremely grippy (especially wet). For the past few years, I've been using Victorinox Forschner knives, and they've been fantastic. They're tough, and a quick pass with a honing steel restores their cutting ability. This knife will perform just as well as my other Victorinox Forschner knives, without a doubt. This is fantastic! Knife is razor-sharp and extremely thin.
I use it to quickly slice newspaper pages apart as part of my archive work, and it's a great knife with a lot of flexibility. Victorinox, not Forschner, is the brand on the knife. Is it possible that the former purchased the latter? It makes no difference. I'm confident that the knife in Amazon's listing is the same one.
This was a gift for a friend, and I've heard nothing but good things about it. It's flexible enough for good filet work, as I discovered when I received it. It's not overly substantial or high-end. It doesn't have the same feel as other knives I've paid a lot more for, but it appears to do the job better.
It does not come with a sleeve, so you will need to make or purchase one. It slices through meat like butter with a hot knife.
