It's my only gripe, but it's not a deal-breaker! The fillet knives should have a little more pliability. They're not bad at all. However, the 6" fillet knife I purchased is a little stiff for a fillet knife, but you know how opinions go! For the past six years, I've owned a Dexter knife that my wife purchased for me. It's what I've used to fillet a lot of trout and walleye. With it, I've killed around 20 deer. I've used it to dice a lot of vegetables. It's my go-to knife for pretty much anything. And I don't think I've sharpened it more than four times. They maintain their edge better than any other thin blade knife I've ever used. And I've had a lot of them over the last 25 years.

I've never owned a better fillet knife than this one. I'm a lucky fisherman who enjoys fishing. In Florida, we catch and eat a lot of fish, and this knife is the best I've ever used. The blade is razor-sharp, flexible, and thin. It works well with any size fish, but is especially useful when filleting a large dolphin or wahoo. The flexible blade will aid in the preservation of every piece of meat, and this knife cuts through bone like butter. I've never cut myself with it, and I think it's because of how well it holds an edge. Sharper blades require less force to use and cause less slippage. Less mishaps are caused by ease of use. Mine is five years old and is in excellent condition. On the blade, there is no discoloration or oxidation. This knife is a must-have if you clean fish.
