Filet knives of the highest quality
5/5

Only Dexters knives are seen on party boats in the Northeast United States. The knives sharpen easily and blunt quickly, and the relative softness of the steel gives them flex and toughness. They cut more fish in a week than most people do in a lifetime. Assume that after 20 pounds of fish or so, you'll need to retouch the edge. They're a little rough on the outside, but they're cheap to throw away and can be used in any situation. Unless you purposefully abuse the steel, it will patina, delaying rust.

Dexter has a new look
5/5

I have a Dexter that was given to me by a friend about 30 years ago, and it is still in good working order, though the blade has lost some width due to sharpening. It was designed to cut insulation, but I use it as a kitchen knife, and now I have a brand new Dexter that will undoubtedly outlast me, and the quality appears to be on par with the old one. One thing to keep in mind is that because this knife is made of the high carbon steel I prefer, it will rust and the blade will become almost black over time. It's simple to sharpen and keeps its edge.

Lightweight, powerful, and razor-sharp
5/5

This knife's handling qualities are ideal for the task at hand. Even when wet, the wood provides a secure grip, and the blade is light, stiff, and razor sharp. You'll have a great knife for years if you give it a nice patina to protect the metal from rust.

This is a professional knife that is meant to be used, not displayed
5/5

This is a knife used by professional fish handlers. While stainless steel blades are easier to keep razor sharp and last longer, this knife's blade is carbon steel, which WILL discolor. It can also rust if it isn't cleaned and dried right away after use. Don't buy this model if you want a gleaming, attractive knife. If you're looking for the industry standard fish cleaning knife, look no further.

On the market, the best fillet knife
5/5

I've been using Dexters for a long time and find them to be extremely durable. I left my 6" outside for the entire winter and it now has a razor sharp edge after only 5 minutes of sharpening. For larger game and fish cleaning, the 8" is an excellent skinning knife.

Northern California's Eco Bay
5/5

Right out of the box, this is a razor-sharp product. Mechanical insulator is my current job title. For duct wrap, this is a fantastic knife. Save yourself a few extra inches of bending over by using a blade that is the right length. Every day, you'll get 4 additional rolls! ((eco bay)) sf California (you don't want any smoke).
