This knife was purchased specifically for the purpose of deboning chicken. Because of the amount of food I've cooked this year due to lockdowns and closures, I've found myself deboning at least a couple whole chickens or pre-cooking a couple of whole chickens. a couple of times a week, I pack chicken legs My larger knives were too big for this, and I'm a lefty, so finding a cheap honosuke has been difficult. The knife came sharp out of the box, and the handle, while not octagonal, fits my hand well for the price. Because it's stainless, I'm able to be a little more lenient with its care, and I've found myself using it to cut smaller items like garlic, ginger, tumeric, and shallots. You get my drift. As with any petty knife, you can spend less, a little more, or a lot more, but if you're looking for a low-cost option, this isn't a bad choice. And I apologize for the poor photo; I couldn't get my phone to take a decent picture today, so yeah.
I've worked as a chef for 12 years, 5 of them in the sushi industry and at a very high level. Great price for a solid little knife that won't keep an edge for the entire day but will quickly return to razor sharp. Perfect for anyone new to knife sharpening and maintenance who wants to learn on a low-risk basis, or anyone serious who needs something that works but can't afford a $120 Miyabi utility. I didn't expect to enjoy it as much as I did.
Take care! This knife is razor-sharp to the point of being dangerous. By accident, I lightly tapped my finger and received a severe cut. Take caution when using this. In terms of sharpness and quality, I have handcrafted Japanese swords that I would compare this knife to. It's absolutely incredible.
Although the blade of the knife is good, the handle is made of cheap wood. It was necessary for me to patch it and varnish it.
Make sure it's made in Japan, not China, because I've tried a lot of Chinese kitchen knives. All of that is nonsense. Try it. It won't let you down.
