Left-handed people should use this knife. People who are left-handed are probably more difficult to come by than those who are right-handed. After g-, the letters "L" and "R" indicate a left-handed knife.

Is this a single bevel, or a pair of bevels? Sushi is traditionally made with it. It comes in handy for a variety of fish. It was suggested to me by a sushi chef. br>I haven't tried it with meat, but I'm sure it would work if you kept a good edge on it. It's a lovely knife, and I sharpened it right away after receiving it because I wanted a razor-sharp edge.

Sushi knives are either left-handed or right-handed, in case you didn't know. I highly recommend this knife, as well as all of their other knives. It's definitely worth a look.
The one-sided edge is razor sharp and extremely easy to keep clean (especially since I only use it to cut down fish). It's not too heavy, but it's well balanced. If you've ever used a global, you're familiar with how the handle feels, and because it's one-sided, sharpening is quick and easy. This is a sashimi knife, so it's not designed to cut everything, but rather to slice meats into paper thin slices.
You won't find a better knife in the $100 price range if you sharpen it properly and use a steel or ceramic frequently and correctly.

The left-handed handle has a wonderful feel to it. There aren't many left-handed knives on the market. It's pricier than right-handed versions, but it's well worth it.
