You can adjust it according to your needs. This knife has a thicker blade and is definitely less flexible than a filet knife, although it can still bend somewhat. Among other things, I have used mine to process wild game and for cooking in general. This was a great purchase for me. It came sharp and has remained sharp for a long time.

This exceptional quality rare Wusthof knife is awesome because the blackwood handles were discontinued last time I checked, so finding this amazing knife on Amazon was a truly amazing find. This knife has an absolutely beautiful handle, is lightweight, and feels substantial in the hand. The blade is extremely strong - with this knife you do not have to worry about finding a knife that is flimsy when After using these knives, it is not recommended to put them in the dishwasher, and I strongly suggest you wash and hone them immediately. To maintain their pristine appearance, they need to be kept clean (oil the handles), but this can easily be avoided by avoiding prolonged contact with water. In addition to the knives in this set, I own the block in which they are contained, and I am very pleased with them.
